This recipe is a keeper for several reasons:
- It is a nutritionally complete One-Pot Meal, which equals a really healthy, delicious dinner in just 30 minutes.
- My daughter, while perhaps less interested in the nutritional content (Kale is in fact a super food!), kept exclaiming throughout dinner that it tastes "Just Like Chili!" She didn't think it looked like chili, but it tastes like chili and she went so far as to proclaim it Better than ordinary chili on account of the delightfully chunky texture.
- I only had to coax and spoon feed bites to one of the kids.
- We didn't have any leftovers.
I'm not feeling quite myself lately, and though I'm sure it will pass and I'll find the silver lining soon, it sure helps in the meantime to have a One-Pot-Meal dinner success. Try it. You'll like it. (Adapted from my favorite cookbook, Feeding the Whole Family)

This was great! I amped up the spices and also added a can of black beans. Next time I may add a diced sweet potato as well. I never would have thought to add cinnamon to chili, but it was fantastic!

This worked out perfect for my purposes. I had kale that needed to be used but not much else as I was holding off on a grocery run. I had to omit the corn and substitute black beans for kidneys, but besides that I was able to make this with what I had on hand. It turned out tasty and was quick and easy to make. This is a great middle of the week recipe. Thanks!
