This recipe is a keeper for several reasons:
- It is a nutritionally complete One-Pot Meal, which equals a really healthy, delicious dinner in just 30 minutes.
- My daughter, while perhaps less interested in the nutritional content (Kale is in fact a super food!), kept exclaiming throughout dinner that it tastes “Just Like Chili!” She didn’t think it looked like chili, but it tastes like chili and she went so far as to proclaim it Better than ordinary chili on account of the delightfully chunky texture.
- I only had to coax and spoon feed bites to one of the kids.
- We didn’t have any leftovers.
I’m not feeling quite myself lately, and though I’m sure it will pass and I’ll find the silver lining soon, it sure helps in the meantime to have a One-Pot-Meal dinner success. Try it. You’ll like it. (Adapted from my favorite cookbook, Feeding the Whole Family)
