Carrot Ginger Rice with Fresh Mint + Giveaway

  • 1 tablespoon coconut oil
  • ½ a medium sweet yellow onion, diced
  • 1 heaping tablespoon minced fresh ginger
  • 2 garlic cloves, minced
  • 1 cup Basmati Rice
  • 1¾ cup water
  • ½ teaspoon salt
  • 1 can Libby's Sliced Carrots, drained
  • 10 to 12 large fresh mint leaves thinly sliced
  1. In a medium saucepan, heat the coconut oil over medium heat. Add the onions and garlic and saute until softened, 5 to 7 minutes. Add the ginger and saute for an additional minute. Stir in the rice and stir for another minute or two.
  2. Add the water and salt and bring to a boil. Immediately reduce heat and simmer covered until all the water has been absorbed, about 15 to 20 minutes. Remove from heat and let it stand, covered, for 5 minutes. Gently stir in the carrots and mint. Serve warm.
