Healthy Tex Mex Breakfast Pizzas

Ingredients
  • 4 whole grain English muffins, halved
  • 3 eggs, scrambled
  • 1½ cups cooked pinto beans, rinsed and drained
  • ¾ cup fresh salsa, divided
  • 3 to 4 tablespoons fresh cilantro, chopped
  • ½ teaspoon ground cumin
  • ½ teaspoon ground chile powder
  • dash of salt
  • 1 cup shredded cheese
Instructions
  1. Lightly toast the English muffins. Meanwhile, in a medium bowl, combine the beans, ¼ cup salsa, cilantro, cumin, and chile powder. Gently mash mixture until it is chunky but well combined. Stir in the eggs. Scoop the mixture onto each lightly toasted muffin half.
  2. Place halves, bean side up on a foil lined baking sheet and top with cheese. Broil for 3 to 5 minutes or until cheese is bubbly. Serve with remaining salsa.
