Simple Chowder
Serves: 10 to 12
  • 1 cup yellow onion, diced small
  • 1 cup celery, diced small
  • 4 cups potatoes (butter gold works well), diced
  • ¾ cup butter
  • scant ½ cup flour
  • 1 quart half and half
  • 1½ teaspoon salt
  • ½ teaspoon sugar
  • Freshly ground pepper
  1. Add the vegetables to a large pot and add just enough water to cover the vegetables. Simmer over medium heat until tender (about 15 minutes or so).
  2. In a separate pan, melt the butter. Add the flour and cook for 1 minute. Add the half and half, salt, and sugar. Cook, stirring constantly, until thick and smooth. Add to the undrained vegetables. Simmer slowly for another 10 minutes. Add cooked bacon or clams as desired. Season to taste with freshly ground pepper.
When I make this, I use a thick cut, nitrate free, bacon - about 6 slices.
