Everything Bagel Muffins

Serves: 9-12 muffins
  • 2 cups flour*
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 cup shredded Romano/Parmesan Cheese
  • 1/ 4 cup chives
  • 1 egg
  • 3 tablespoons melted butter
  • 1 cup milk
Everything Bagel Spice Mix
  • 2 tablespoons poppy seeds
  • 2 tablespoons sesame seeds
  • 1 tablespoon dried minced garlic
  • 1 tablespoon dried minced onions
  • 1 tablespoon caraway seeds
  • 1 tablespoon coarse or flaky sea salt
  1. Preheat oven to 400 degrees Fahrenheit. Grease a standard 12 cup muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Stir in the cheese and chives.
  3. In a separate bowl, whisk together all of the wet ingredients.
  4. Make a well in the center of the flour mixture. Pour in the milk mixture and stir just until mixed, being careful to not over mix.
  5. For large muffins (as picture) scoop ⅓ cup batter into 9 well greased muffin cups. For smaller muffins, scoop ¼ cup batter into 12 well greased muffin cups. Sprinkle approximately 1 teaspoon of bagel spice mix onto the top of each muffin, gently pressing it in.
  6. Bake for 15 minutes, or until muffins are lightly golden and spring back when touched. Cool in muffin tin for 5 minutes, then remove to a wire rack.
* You can use all purpose flour, or a blend of whole grain flours. I like it with 1 cup spelt flour and 1 cup white flour.
