Caramel Apple Muffins

Serves: 12 muffins
  • 2 cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup sugar
  • 2 eggs
  • 6 tablespoons melted butter (or coconut oil)
  • ½ cup milk (or more if necessary)
  • 1 teaspoon vanilla extract
  • 1 heaping cup of peeled, diced apple, approximately 1 large apple (see note)
For the Topping
  • 4 tablespoons softened butter
  • ⅓ cup rolled oats
  • ⅓ cup flour
  • ⅓ cup brown sugar
  • ⅓ cup caramel sauce (homemade or store bought, see note)
  1. Preheat oven to 400 degrees Fahrenheit. Grease or line a standard 12 cup muffin tin with muffin liners.
  2. In a large mixing bowl, combine the flour, baking powder, salt, cinnamon, and sugar.
  3. In a separate bowl, combine the eggs, butter, milk, and vanilla.
  4. Make a well in the center of the flour mixture and pour in the egg mixture. Stir until just combined, being careful to not over mix. Fold in the apples. The batter will be thick (see picture above) but moist. If your batter feels too thick (because it can vary in different climates) add a little more milk, 1 tablespoon at a time).
  5. Scoop the batter into the prepared muffin tin, about ⅓ cup batter per cup.
  6. To make the streusel, combine the butter, oats, flour, and sugar until it forms a crumble. I like to do this with my hands.
  7. Sprinkle the crumble evenly over the batter in each muffin tin, lightly pressing it into the top of each muffin.
  8. Bake at 400 degrees Fahrenheit for 15 minutes or until muffins are golden and spring back when touched.
  9. Remove from oven and place on wire rack to cool. Drizzle with caramel sauce and serve warm or at room temperature.
