Chocolate Peanut Butter Banana Bread

  • 3 to 4 large, very ripe bananas (about 1½ cups) mashed
  • ¼ cup whole milk plain yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 6 tablespoons melted coconut oil
  • ½ cup sugar (or honey)
  • 2 cups all purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • a generous ½ cup peanut butter chips
  • a generous ½ cup dark chocolate chunks or chips
  1. Preheat oven to 350 degrees Fahrenheit. Grease a standard loaf pan.
  2. In a large bowl, mash the bananas. Stir in the yogurt, eggs, vanilla, oil, and sugar (or honey).
  3. Add the flour, baking soda, and salt. Mix just until combined. Fold in the chocolate and peanut butter chips.
  4. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until center is set and loaf is golden. Cool the loaf in pan for 5 minutes and then turn out onto a wire rack. If you want it to cut smoothly, let it cool for another 30 minutes. If you want to eat a hot, gooey slice of delicious banana bread right away, don't let me stop you.
This bread freezes beautifully! Just cool completely and wrap well to avoid frost.
