As a single parent with four young kids, people often say to me, "I could never do what you do." What they really mean though is that they can't imagine doing what I do. If you don't have kids or you have a functional two parent set up with a reliable income, then it probably is nearly impossible to imagine taking care of four kids day in and day out and paying all the bills solo. I certainly never imagined this would be my life. But when you find yourself in a sink or swim moment, most people can figure out how to keep their head above water.
If there's one thing I've learned in the past five years, it's that we can do very hard things when we have to. Everyone can.

This is just a little public service message from someone who has been divorced for a while to anyone who is still wondering how they'll ever survive something so terrible.

These Strawberry Banana Muffins are really great. Whole grain flour, fruit, and lightly sweetened with a bit of honey. Go ahead and smear them with some butter and strawberry jam and take a warm bite - it's a muffin that can right a lot of wrongs. Enjoy.
(I first published this recipe over on Food Fanatic - check it out).
