This time of year is always a busy one at my house. In addition to the Spring cleaning and organizing bug I always catch as the weather warms up, we've also got five family birthdays in a row and the Easter holiday to celebrate. Mostly, this means I spend a lot of time in the kitchen.
I haven't quite settled on this year's Easter menu yet. I'll probably repeat last year's Roasted Red Grapes with Potatoes and Thyme to go along with the ham, because roasted grapes are incredibly delicious! I'm also going to stick with simple side dishes, like this Vegetable au Gratin, to keep things manageable in my crazy holiday kitchen.
Using Libby's canned vegetables keeps this dish really simple, quick, and healthy. You can have this deliciously creamy side dish on the table in just 30 minutes, with only 10 minutes of prep time. It will pair well with any meat or fish dish for a well rounded dinner meal.

Vegetable au Gratin
Ingredients
1 small yellow onion, diced
2 tablespoons butter
1 tablespoon flour
4 oz cream cheese, softened
½ cup apple or white grape juice
salt and pepper
2 cans Libby's Sliced Potatoes 15 oz, drained
1 can Libby's Cut Green Beans 14.5 oz, drained
1 can Libby's Mixed Vegetables 15 oz, drained
⅓ cup thinly sliced fresh basil leaves
2 cups grated cheddar cheese
Directions
Preheat oven to 375 degrees Fahrenheit.
In a small sauce pan, melt butter over medium heat. Add diced onion and saute 5 to 7 minutes or until soft and golden. Reduce heat to low and stir in flour and cream cheese and mix until creamy. Stir in juice and season to taste with salt and pepper. Simmer for 2 to 3 minutes, or until mixture resembles a creamy sauce. Remove from heat.
In a large bowl, combine vegetables and basil with cream sauce, stirring gently until vegetables are well coated. Pour into a 2 qt. baking dish. Top with cheese and bake for 20 minutes. When the mixture is bubbly and cheese is melted, turn oven to broil and cook for an additional 3 to 5 minutes or until cheese is lightly browned. Remove from oven and serve warm. Serves 6 to 8.
