Breakfast is my favorite meal of the day (well, when it happens after 9 AM anyway). However, Breakfast for Dinner is my kids favorite meal of the week!
Inevitably, there is a day most weeks in which we find ourselves staring into the cupboards five minutes before dinner time and realizing there really isn't anything to fix. My solution is almost always Breakfast for Dinner.
Because it is Dinner after all, I try to cut back some of the processed sugars that seem to prevail in so many breakfast dishes. This Pineapple Blueberry Sauce isn't too sweet and I feel good about the healthy serving of berries in every bite.
Pineapple Blueberry Sauce
Ingredients
2 tablespoons arrowroot powder or cornstarch
1 cup unsweetened pineapple juice
1 cup blueberries (fresh or frozen)
2 tablespoons pure maple syrup (or more to taste)
1 teaspoon freshly squeezed lemon juice
1 package Eggo Whole Grain Waffles
Directions
In a small saucepan, mix together arrowroot powder and juice. Stir in blueberries and syrup and bring to a simmer over medium heat. Stir constantly until mixture thickens and turns glossy. Remove from heat and stir in lemon juice. Makes 2 cups.
Prepare waffles according to package instructions. Serve with Pineapple Blueberry Sauce drizzled over the top for a delicious and healthy meal.
