Making good Indian food at home is so easy! This simple yet flavorful Coconut Curry Sauce is one of my best back pocket meals. We eat it with chicken and rice for a quick weeknight dinner, or with veggies and rice for a good Meatless Monday meal.
This curry sauce is one of those recipes that really makes for a satisfying meal with very little effort, which is probably why we end up eating it so often.
There was a time during graduate school that I ate so much vegetarian Indian food. We lived just around the corner from a good vegetarian Indian restaurant and picking up a few chapatis and a bowl of saag paneer became an almost daily routine. Grabbing a cup of milk chai became a twice daily routine. So good, that milk chai!
Then I moved across town to a house with a yard for my babies and I didn't eat much Indian food for a long time. This Coconut Curry Sauce, however, was a revelation. I don't have to trek to any restaurants with my little ones in tow to enjoy a good Indian dinner. Now, I'm in the process of recruiting all of the kids to the joys of the Indian food world. They are in love with the Asian food markets in town, so it's been mostly easy getting them on board. This Coconut Curry Sauce is enjoyed by all!
