Now, about Valentine's Day as a single, and not just single but also twice divorced, woman. Here's the thing, it's really no big deal to me.
I have never put a lot of thought into Valentine's Day, other than it's a good excuse to make some fun crafts and most likely eat something chocolate (Dark Chocolate Pudding with Raspberries anyone?). I may even take a few extra measures for a more special dinner, even if it is just me and the kids.
For some reason, Valentine's Day has never been associated with anything romantic in my mind. Thankfully, February 14th won't be any reason for me to wallow in self pity or feel painfully single for even a moment. And honestly, after that second marriage nightmare and subsequent divorce, I'm actually quite grateful to be living the single life right now. I'll buy my own roses and make my own dinner, thank you very much.
I'm also going to use Valentine's Day this year as a chance to do-over some of the things I failed at Christmas. The Christmas cards and pictures I never sent in December have been refashioned as Valentine's Cards. All those treats and thank you's that were never delivered are happening a second time around as Love Day treats instead.
There may not be any romance here, but Valentine's Day has a good motto this year: If at first you don't succeed, try, try again.
About this pasta, which really and truly is one of my most favorite things to cook, it largely depends on good ingredients - as most food does.
