This Watermelon Vanilla Mint Cooler was the drink of choice at our Fourth of July celebration this weekend. It is simple, kid friendly, and really tasty. I've been enjoying it for a few weeks now, but after its enthusiastic reception at our holiday gathering yesterday, I decided it needed to be shared.
This drink was entirely inspired by the mint, growing like a weed, in the garden. "What can we add mint to?" is the question du jour at our house, which is how it ended up in a watermelon drink. It turned out to be a very happy experiment that we've been repeating ever since.
There is something about mint and watermelon that just spells summer, and this drink goes a long way towards cooling off a hot summer day.
Watermelon Vanilla Mint Cooler
Ingredients
- 3 cups watermelon, cubed
- ¼ cup vanilla yogurt
- 15 small mint leaves, or to taste
- 1 cup ice
Instructions
- Combine all of the ingredients in a blender in the order listed. Pulse until smooth. Refrigerate for about an hour to chill, then enjoy. This can easily be doubled or tripled if you have a high powered blender (I use a Blendtec).

I've made watermelon/mint drinks so many times, but I've never thought of adding vanilla yogurt! Usually, I do a spritzer with some lime sparkling water. Can't wait for summer to give this one a try!
