Well, that was a week! I'm thinking this next week will be much better, because surely it's got to go up from here, right?
But, as usual, there was a lot of good food to be eaten:
Melissa Clark's Cauliflower Parmesan from the NYTimes is so good! We've made it three times recently and it never disappoints - best way I've ever found to get my kids to eat their cauliflower.
We made this small batch applesauce for breakfast with our delivery of Stemilt Pinata Apples this week and, healthy as it is, I thought it was better than dessert. So much flavor in a simple applesauce - partly in thanks to the great apples I used, and partly thanks to the delicious spices in the recipe. Perfection.
These Cinnamon Roll Muffins were the most popular recipe here on Some the Wiser this week, and if you've tried them already, then that probably won't surprise you. We try them all the time *wink*
And speaking of STW favorites, this Sheet Pan Roast Chicken Dinner is on our table at least once a week (and twice this week) this time of year because I have an abundance of sweet potatoes and Brussels Sprouts and the whole family adores this easy one pan chicken dinner recipe.
I rekindled my winter love of all things lemon recently, starting with this Simple Lemon and Arugula Pasta from Simple Bites. Following it up with Coconut Quinoa Lemon Breakfast Cereal for breakfast this morning.
I also tried making Cauliflower Rice for the first time this week in some quick and easy burrito bowls for family dinner. I was pleasantly surprised by just how good it is! Having made it twice now, I'd say that I do like it better when I use the grater attachment on my food processor, just FYI.

It's just a cheap, quick way to make a maple flavored syrup that actually tastes good, in case you don't tap your own maple trees in the back yard, or want to run to the grocery store, or don't have the $$$ it takes to buy real maple syrup for all your kids' waffle needs, or if you are my Grandma, who still makes this syrup all the time because she's old school and was making syrup in the southwest before it was commonplace to find small $20 bottles of real maple syrup at the grocery store. And before you get too upset about a better tasting homemade alternative to that gross Log Cabin corn syrup stuff that they sell under the pseudonym of "Maple Syrup" at the grocery store, I just want to mention that I too buy real maple syrup and keep a costco sized bottle of it in my fridge every day, so I know that REAL MAPLE SYRUP IS BETTER, believe me, I know. End Rant.
