Thank you so very much for the many kind emails I have received in response to my Good News Bad News. And now, I'm moving right along . . . because what else can you do when life knocks you off course? Your kindness and support means a lot to me.
I couldn't care less about the Super Bowl this weekend - I don't even know anything about anything football related. That being said, I like to eat and I will always jump at any excuse for some good snacking. So, while the Super Bowl is humming in the background, you'll find me at the snack table with this Buffalo Blue Cheese Chicken Salad Dip.
You can make sandwiches out of this, stick it in pita pockets, or roll it up into a delicious wrap. I really like the ease of dips though. Stir all the ingredients together and pull out a bag of crackers or chips - voila! This is some good snacking!
