I couldn't care less about the Super Bowl this weekend - I don't even know anything about anything football related. That being said, I like to eat and I will always jump at any excuse for some good snacking. So, while the Super Bowl is humming in the background, you'll find me at the snack table with this Buffalo Blue Cheese Chicken Salad Dip.
You can make sandwiches out of this, stick it in pita pockets, or roll it up into a delicious wrap. I really like the ease of dips though. Stir all the ingredients together and pull out a bag of crackers or chips - voila! This is some good snacking!

Buffalo Blue Cheese Chicken Salad Dip
Ingredients
5 cups cooked chicken, cut into small chunks (about 1.5 lbs)
3 ribs celery, diced
1 red bell pepper, diced
½ cup mayonnaise
3 tablespoons hot sauce
2 tablespoons blue cheese dressing
½ cup crumbled blue cheese
2 to 3 tablespoons green onions, diced
Directions
Combine all the ingredients in a large bowl and stir until well combined. Garnish with additional diced green onions if desired. Can be made up to 2 days ahead. Makes approximately 6 cups.
