Last week I hosted a fun family Harvest Party with My Mind's Eye. Their paper goods are everything you need to turn a simple meal with friends or family into something really special! It's amazing what a package of beautiful paper fans can do for a dining room! Party in a box.
For the Harvest Party, I served up a pot of my Chunky Pumpkin Black Bean Soup, which was a big hit. We also had a fresh roasted corn dip, butternut squash and apple tarts, and Pumpkin Pie of course!
The highlight for the kids, however, was the Caramel Corn. If I'm being honest, the caramel corn might have been my favorite part too.
My mom has always made caramel corn around the holidays for as long as I can remember. Her mom always did it and the unofficial family tradition was passed along. I've been using the same recipe that my mom and grandma have used since long before my time.
Recently, however, I had the pleasure of gathering with some of my extended family at my grandmother's house. My Aunt JoAnn brought a couple big bowls of Caramel Popcorn to share. She said it was the same recipe that Grandma had always used, but it tasted different to me. It tasted better! The stuff was so incredibly addicting that everyone had those bowls emptied in minutes. We bugged my Aunt to find out what her secret was and she told us! It's a simple, almost cheater trick. It's all about the popcorn.

My husband loves caramel popcorn but always sticks his nose up at the way I make it. I'll have to try this and see if he approves!

Ha! Well, I hope this one is up to his standards. I actually hardly ever make it - I just wait for a family member to do it . . . but this recipe really is so easy and so good. Hope you enjoy it.
